Skillet Bacon Jam |
Love Bacon? Try Skillet Bacon Jam!
Everything is better with
bacon! Sampling a product that contains bacon, fantastic! I was delighted to incorporate Skillet Bacon Jam into our dinner menu for a few days. Before sharing my culinary experiments, let me explain what Bacon Jam is.
Chef Josh Henderson states "we make this bacon spread condiment called bacon jam..you say what?.. that’s right, we use niman ranch bacon and render it down along with onions, balsamic and other spices. It cooks for several hours until it is a perfect blend of smoky, tangy, savory and slightly sweet….basically spreadable bacony goodness!
USDA approved."
Chef Henderson created
Skillet Street Food in Seattle out of a vintage
Airstream trailer. His innovative lunch menus are based on
American-inspired food that are prepared with seasonal ingredients and classic techniques. Chef Henderson has expanded his business to include catering,
food products, and a new restaurant located in
Seattle's Capitol Hill neighborhood.
The Burger with Skillet Bacon Jam is what caused Seattle to fall in love with Bacon Jam. So that is what I would make first. Posted on their website is the original recipe that is being served on their Airstream trailers and at the Skillet Dinner.

The Burger with Skillet Bacon Jam |
24 (.56 kilo) oz. ground beef, grass fed
8 oz. (226 g) oz Skillet Bacon Jam
4 (113 g) oz cambozola, sliced
2 (.5 liter) cups
arugula, loosely packed
4 brioche
bunsKosher salt and
black pepper to taste
2 (.30 ml)
Tbsp olive oil
Instructions
First, form the burger into 6 oz patties.
Then, set your pan on medium high heat and put the olive oil in the pan until it is hot.
Put the patties in the pan and cook to medium, approx 5 minutes each side. Make sure to season with salt and pepper.
After flipping the first time, place the cambozola on the burger and let it melt slightly.
Toast the brioche bun in the same pan.
To assemble, place bacon jam on each bun. Put arugula on the bottom bun. Place the burger on the arugula and put the top bun on top. Enjoy!
Even after a few substitutions (blue cheese and baby lettuce) and cooking the burgers on the grill, it was easy to see why people love Bacon Jam so much. The Bacon Jam added a fantastic smoky bacon flavor to the burger. The burgers were moist, juicy, and very flavorful, no need for other condiments. It was such a big hit with the entire family, that we ate burgers a second night that week (just to use the Bacon Jam). This time I added Bacon Jam to the ground beef before I put them on the grill. This gave the burgers a caramelized crust that was out of this world. The house was split on agreeing on which burger was better, but one thing could be agreed upon. The burgers were definitely better with Bacon Jam.
Another evening, I added the remainder of the Bacon Jam to my homemade macaroni and cheese. I incorporated it into my sharp cheddar cheese mixture while it was still bubbling on the stove. The Bacon Jam added texture as well as a great deal of flavor to the cavatappi.
